Xuzhou barbecue can date back to the Han Dynasty with a history ofabout 2,000 years. Made of mutton mostly, Xuzhou barbecue is a reflectionof Xuzhou food culture. However, you can eat beef, fish, sausage(臘肠),chicken and pork, too. And there are also some vegetables, like eggplants,green peppers and potatoes. Grilled bread and Chinese bread covered withcheese are popular as well. Therefore, more and more people are interestedin Xuzhou barbecue.
Eating Xuzhou barbecue cannot be separated from local pancakes orsweet vinegar. They can make the skewers not so greasy(油腻的). Youcan have a barbecue with some cold dishes, too. There are many kinds ofcold dishes made of kelp, cucumber and so on.
In recent years, many families have chosen to have a barbecue to gettogether at weekends. It is a new way for people to have fun after a week’shard work.
Making a barbecue is not very difficult. First, youneed to prepare an oven, some charcoal(木炭), muttonand ingredients. Then, thread the mutton and vegetables with some sticks and brush some oil on them. Next, grill the mutton andvegetables with all kinds of ingredients. Finally, you can pick up a skewer!
