One hot day in May, I opened the door of a small Sicilian café and found an elderly woman sitting in the dark. Not realizing the café was closed, I told her in poor Italian about my hope to find a special type of chocolate which is1)unique to the island.

Surprised and happy to see a traveler so early in the season,she asked me to come in and pulled back a curtain. There was a wall of shelves holding nothing but dozens upon2)dozens of chocolate bars in every3)flavor4)imaginable.

For years, travelers have been attracted to Sicily’s interesting history,5)smoking volcanoes and famous6)cuisine. But7)somehow, the island’s8)distinctive chocolate—made in the World9)Heritage town of Modica and inspired by the traditions of the ancient Aztecs注1—has remained one of the world’s best-kept secrets.

When the Spanish were ruling Sicily in the 16thcentury, they went to Mexico and brought back10)cacao and the recipes needed for what the Aztecs called xocoàtl注2. Unlike the chocolate we know, the original xocoàtl was11)bitter and was put over salads or eaten on its own as a12)dietary supplement.

In Modica,13)generations of families have followed the same techniques. Local people would mix the chocolate14)paste with sugar, “15)cold working” it so that the sugar doesn’t get hot enough to16)melt; it gives the treat an unusual but deliciously17)crunchy18)texture. Then, they would mix flavors such as19)lime oil enjoyed on Sicily.

After a long chat with the woman in the café, I continued on my journey to find the heart of Sicilian chocolate making. Modica was still about an hour’s

drive and I was ready to discover the town’s

most popular chocolate shops.

The first shop I20)encountered was the grand Antica Dolceria Bonajuto, which dates back to the 1880s, and is still21)run by the family who22)founded it. When the rest of Europe began to develop a taste for milk chocolate in the 19thcentury,the family continued making23)dairy-free, dark chocolate in the Aztec style.

Just down the road was Antica Dolceria Rizza, which opened in 1935 and makes their famous treats with flavors such as24)fiery25)ginger. At Caffe del’ Arte, which doubles as a café, I had the opportunity to try some hot chocolate with chocolate-covered fruit and some26)typical Sicilian27)pastries.

Modica’s businesses are serious about28)preserving and celebrating their chocolate traditions. Even when most of Modica’s29)infrastructure was destroyed in the 1693 earthquake, the chocolate industry survived. In 2013, the30)Consortium for the Protection of Modica Chocolate published recipes dating back to the 1740s, and in December, an annual festival called ChocoModica31)melds the town’s two most important features: chocolate and baroque architecture. There’s even a chocolate museum located within the Palace of Culture. Inside,almost everything is made out of chocolate, from classical statues to a32)relief map of Italy.

Recently, Modica and the surrounding area were chosen as a filming location for the popular BBC mystery series, bringing a new wave of tourists to discover the secret of Modica’s chocolate. But even if the secret gets out, the unusually prepared treat remains nearly impossible to find outside of Italy, which gives me the perfect excuse to return to the Italian town.
